- 1 onion slices
- 5 cloves garlic finaly chooped
- 1 tbsp ghee
- 1 tsp oil
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder

- 2 green cardomom
- 1/4 tsp Red chili powder
- 1 bay leave
- Pinch asafoetida
- For gatta :-
- 1 cup cheak flour
- 1 tbsp oil
- to taste Salt
- Pinch baking soda
- 1/4 tsp Red chili powder
- 1/4 tsp turmeric powder
- 1/4 teaspoon cumin seeds
- 1/4 tsp carom seeds
- 1/4 tsp garam masala
- 2 tbsp curd
- For gattas fry
- 2 tbsp oil
Steps to make to make Rajasthani gatta pulav
- Wash rice and soak it in water for 15-20 minutes. Drain and keep aside until needed.
- Mix gram flour, turmeric powder, red chilli powder, salt, soda bicarbonate, cumin seeds, half teaspoon ginger, and yogurt. Add a little water to make a stiff dough.


- Divide the dough into 8 equal portions and Shape each portion in to a 8"long thin cylindrical roll.


- In a large deep pan boil water until it comes to a boil. Once the water comes to a brisk boil, add the gattas into the water and boil until they comes floating to the top. Once they come floating to the top, boil for another 3 to 4 minutes.


- Drain the cylindrical gram flour rolls from the water and cool. Cut each cylinder into smaller pieces,(1/2 ") and keep aside.


- Take a big pan and heat 2 tbsp oil in a pan.Add gatta and shallow fry till golden brown. Keep aside it.


- In a pan add one tbsp ghee and add cumin seeds, cloves, cinnamon, cardamoms, garlic and ginger and fry for a minute till aromatic.Now add onions and saute till they turn golden brown.


- Add chilli powder, turmeric powder, garam masala and salt, and mix well.

- Add rice and saute gently for 2 minutes on a low or medium flame.pour 3 cups water and stir.

- Cover and let the rice cook on a low flame, till the water is absorbed and the rice is well cooked.

- Now add gattas and gently mix and cover and let cook for 2 minutes.Turns off the flame and let the rice stand for 5 minutes.



- Serve the gattas pulav hot with raita or curd.
