- 1 tbsp Corn flour
- Pinch Saffron Yellow Food Color

- For Sugar syrup :
- 1 1/2 cups Sugar
- 3/4 cup water
- 3 cardamom
- 15-20 saffron strands
- 1 tsp Lemon juice

- In a bowl take maida, corn flour, yellow food color and whisk well. Add yoghurt, water and whisk well for a smooth lump free batter (add 1 or 2 tbsp water if the batter is very thick. It depends on the flour).



- This should be the consistency of the batter. Cover and let it rest until sugar syrup is prepared.

- In a pan take sugar and water. Once sugar melts add crushed cardamom, saffron strands and lemon juice(lemon juice is added to prevent sugar syrup from crystallizing). Boil for 5-7 minutes until one-string consistency. Switch off the flame and set aside. Sugar syrup should be warm while dipping jalebi.


- In a shallow pan heat oil and 1 tbsp ghee. Add baking soda to the batter and combine well. Transfer the batter to squeeze bottle. When oil is hot enough, on low to medium flame squeeze the bottle in circular motion to make jalebi. Fry jalebi on both sides until crispy.



- Strain and immediately transfer jalebi into warm sugar syrup. Let them soak for a minute and transfer to a plate. Prepare remaining jalebi too.

- Garnish with sliced pista and serve.
