  2. 1/2 tsp lemon juice
  3. 1 tsp ghee
  4. to taste Salt
  5. 1 big pinch of saffron melted in 4 tbsp warm milk
  6. For Aloo koftas :
  7. 2 medium size boiled potatoes
  8. 1/4 tsp turmeric powder
  9. 1 tbsp green chillies-ginger paste
  10. 1/2 tsp red chilli powder
  11. 1 tbsp lemon juice
  12. Few coriander leaves finely chopped
  13. 2 tbsp besan
  14. to taste Salt
  15. Some Oil for deep frying
  16. For Gravy :
  17. 1/4 cup ghee
  18. 3-4 cloves
  19. 3-4 cardamoms(seeds)
  20. 3-4 cinnamon stick
  21. 2 red dry chillies
  22. 1 medium onion chopped
  23. 2 big ripe red tomatoes finely chopped
  24. 1/4 cup boiled green peas
  25. 1/4 tsp garam masala
  26. to taste Salt
  27. 1/4 curd
  28. 1/4 cup grated fresh coconut
  29. 1/4 cup finely chopped fresh coriander leaves
  30. 2 tbsp fried cashewnuts

Instructions to make to make Aloo Kofta Biryani

  1. Wash basmati rice and soak for 1/2 hour. Add ghee, salt, lemon juice to soaked basmati rice. Pressure cook for 2 whistles. Within 5 minute open the cooker lid and spread cook rice on big plate.(So cooked long grain of basmati doesn't stick together). Pour melted saffron milk on it.mix and keep aside.
  2. Preparation of Aloo Koftas.In mixing bowl add peeled boiled potatoes, mashed them. Add & mix turmeric powder, green chillies ginger paste,red chilli powder, lemon juice, coriander leaves,salt and besan.
  3. Mix and make 8 small balls from prepared mixture. Deep fry in hot oil till golden brown. Keep aside.
  4. In nonstick kadhai add and heat ghee, add & saute chopped onion till they turn brownish.
  5. Now add cloves, cardamoms seeds, cinnamon sticks,dry red chillies, green chillies-ginger paste and saute for 2 mins.
  6. Add & mix finely chopped tomatoes, boiled green peas, garam masala,salt. Cover and cook till tomatoes pieces are soft.
  7. Add & mix curd, grated coconut and chopped coriander leaves. Add and mix fried aloo koftas and fried cashewnuts pieces. Off the flame.
  8. In square baking tray,apply ghee inner sides. Divide cooked basmati rice into two equal portions. Spread one portion of rice on one side,other rice portion on other side..in between spread prepared aloo kofta gravy.(As shown in fig).
  9. Cover this prepared baking tray with aluminium foil. Bake in oven at 200 C for 20-25 mins till warm. Serve/ Relish Hot Aromat Aloo Kofta Biryani with Curd or Raita.
